  • 1 tsp bicarbonate of soda

  • 1 large egg

  • 1 tsp ground nutmeg

  • 5oz Butter

  • 8oz Caster Sugar

  • 9oz plain flour

  • 1.5 tsp Cinnamon

  • 1 tsp mixed spice

  • 1/4 tsp ground cloves

  • 1/2 tsp salt

  • 1/2 pints apple puree Approx 3 brambley apples stewed

  • 1oz raisins or chopped walnuts Optional


  1. Make the apple puree by peeling and chopping approx. 3 brambley apples and stewing them with about 1 tbsp of water over a low heat, stirring occasionally until the apple has broken down completely.

  2. Measure out 1/2 pint of apple puree (any left over is nice with yogurt or can be frozen).

  3. Chop the butter up and stir into the hot apple puree to melt the butter.

  4. Sieve together the flour, salt, bicarb and spices.

  5. Put the apple & butter mixture, sugar, egg and flour mixture into a large bowl and beat with a wooden spoon until completely mixed.

  6. Stir in the raisins or walnuts if using (we normally don't).

  7. Pour the mixture into a base lined 8 inch deep circular cake tin.

  8. Bake in a preheated oven 180 degrees fan for about 70 minutes (start testing with a skewer from 60 mins). The cake is done when a skewer comes out clean.
