Quick & Easy Bean Salad

  • 3-4 tsp sugar

  • 1 splash extra virgin olive oil

  • 3 splashes white wine vinegar

  • 1 handful fresh coriander, chopped don't be shy

  • 1/2 slices red onion finely chopped

  • 2 tins mixed pulses drained and rinsed


  1. Put pulses, red onion and coriander into a bowl.
  2. In a separate bowl mix vinegar, sugar and oil. Add more sugar/vinegar to taste.
  3. Spoon this dressing on to bean salad and stop when the contents are well coated.
  4. Leave to fester in the dressing and it gets yummier.
  5. Give it a good stir before serving

Double/triple up ingredients for a buffet dish/ party contribution.

Handy Hint

Can use a red/yellow pepper or celery instead of red onion
(just something to give a fresh crunch in the mix).

    Made this with my daughter; was fun for her to mix everything up. Added less sugar and a bit if chilli for a kick ( not in her portion) sharmisthag.wordpress.com
