Slow cooker veggie shepherd's pie filling

  • 2 tbsp freshly chopped parsley

  • 1 Large onion chopped finely

  • 1 One glass red wine

  • 1 tsp teaspoon chopped rosemary

  • 2 tbsp Bisto

  • 1 tsp Marmite

  • Half pints Boiling water

  • 3 carrots sliced thinly

  • 2 leeks diced

  • 2 celery sticks diced

  • 1 bag quorn mince


  1. Stick it all in the slow cooker and cook on low all day, adding more boiling water if it looks as if it needs it.
  2. Add salt and pepper at the end.
  3. Then transfer to an oven proof dish and top with mash and grated cheese.
  4. Oven or grill until golden brown.

Handy Hint

I don't like Quorn mince but (trust me!) this is actually v nice. You can add other herbs, more wine, etc.
