  • 1-2 cloves of garlic

  • 1 large courgette

  • 1 large carrots

  • 1 jar tomato and basil pasta sauce

  • 2-3 medium stick of celery

  • 1 tbsp olive oil for cooking

  • 1 1 medium onion

  1. First chop all of the vegetables.
  2. Once they are chopped, heat the oil in a pan and fry the vegetables for 5 to 6 minutes over a medium heat until they begin to soften, fry onion first before adding the other vegetables.
  3. When the vegetables have softened slightly, add the jar of Pasta sauce (or the canned tomatoes if that’s what you are using). Stir everything together, reduce the heat to low and simmer for ten minutes, or until the vegetables are cooked through and soft. Stir occasionally while simmering.
  4. When the sauce has cooked, remove it from the pan and transfer it to a heatproof bowl. Use a handheld blender. If the sauce is a little thick (depending on how many vegetables you added. If this happens, simply add a small amount of hot water to thin it out a little.
