  • 2 celery stick

  • 3 tbsp extra virgin olive oil

  • 200g portion of green cabbage

  • 1 onion

  • 1 carrot

  • 300g spinach

  • 2 potatoes

  • 2 fresh tomatoes

  • 1 tin borlotti beans

  • 100g broth mix

  • 200g Parmesan cheese rind (optional)


1) Chop or cut all the vegetables.
2) Heath the olive oil in a large sauspance
3) add the chopped veg but not the tomato
4) salte the veg for 7 minutes staring occasionally
5) add the tomato and the chopped Parmesan skin (unless making a vegetarian soup) and sea salt
6) boil the water, wash the broth mix and add
7) add the water, put on s very low heat and ring
8) cook for 2 hours
9) add borlotti beans and cook for another 15 minutes

Handy Hint

Children love this very healthy meal if fussy about veg, simply liquidize, cook some small pasta and mix.
You can use all sorts of veg but not pepper or sweet veg. Always use onion,carrot and celery.
