White chocolate and cranberry fudge

  • 25g butter

  • 175ml evaporated milk

  • 350g granulated sugar

  • 100g dried cranberries

  • 300g white chocolate, chopped


  1. Line a shallow 10x8” tin.
  2. Heat sugar, milk & butter in a large, heavy pan until sugar is dissolved.
  3. Bring to boil, stirring with wooden spoon. Reduce heat and simmer for 5 minutes.
  4. Remove from heat and add cranberries and chocolate. Quickly stir and pour into tin.
  5. Chill for one hour.

Handy Hint

On step 3 - make sure it is EXACTLY 5 minutes only.
