Lentil, tomato & Carrot soup

  • 1 onion

  • 1 pint vegetable or chicken stock

  • 1 tbsp sweet chilli sauce

  • 1 large carrot

  • 1 clove garlic

  • 1 big handfuls of red lentils

  • 1 tin chopped tomatoes


  1. Chop up the onion, garlic and carrot.
  2. Fry (in olive oil) the onion until soft then add the garlic and carrot.
  3. Gently fry for about 5 mins to soften the carrot.
  4. Add the lentils and stir around so lentils are covered.
  5. Add the sweet chilli sauce and mix around the pan. Cook for a few minutes. Then add the tomatoes covering all the veggies and lentils.
  6. Add the stock, bring to the boil then simmer covered until lentils and carrots are cooked.
  7. Blitz up with a hand blender until smooth. serve immediately.
