Turkey and Ham Pie

  • 1 tbsp olive oil

  • 200ml creme fraiche

  • 300g potatoes cut in chunks

  • 2 leeks thickly sliced

  • 2 cloves garlic finely chopped

  • 500g cooked ham and/or turkey cubed

  • 150g frozen peas

  • 200ml crème fraiche

  • 100ml hot chicken or turkey stock

  • 1 bunch finely chopped parsley

  • 1 pack of puff pastry

  • 1 beaten egg


  1. Pre-heat oven to 2ooc/180 fan/gas mark 6.
  2. Put the oil into a 2 litre pie dish and add potatoes, leeks and garlic and toss. Roast for approx. 30 minutes stirring occasionally until vegetables are tender.
  3. Add turkey, ham, peas, crème fraiche, stock and parsley to the dish. Season and stir well.
  4. Roll out pastry to fit dish then lay on top of filling, tucking in around the edges. Brush with beaten egg or milk and return to the oven for 30 minutes.
  5. Serve from oven with steamed broccoli.

Handy Hint

I vary the amount of ham and turkey depending on what I have left after a roast dinner. I also use leftover roast potatoes if I have them handy.
