Super quick 'Christmassy' baked apples

  • 1 tsp ground cinnamon

  • 4 bramley apples (Allow one small or half a large apple per person)

  • 2 tbsp preserved stem ginger syrup

  • 1 Jar mincemeat

  • 4 tbsp Raisins/sultanas


  1. Pre-heat oven to 170/180 C
  2. Core each apple so that each apple has approx 1.5cm wide hole all the way down the middle and score a line around the circumference (this stops the apples exploding all over your oven)
  3. Place apples in a small baking tray so that they remain upright.
  4. Rub cinnammon into the middle of each apple.
  5. Stuff each apple approx 1/3 full with sultanas/raisins.
  6. Fill remainder of each 'core hole' with mincemeat.
  7. Drizzle over ginger syrup if using and then pour 3-4 tablespoons hot water into baking tray.
  8. Bake in oven for 30-45 mins, until apples have risen and are fluffy.
    Serve with custard.
