  • 3 egg yolk

  • 1 large red pepper

  • 375g packet puff pastry

  • 1 medium courgette

  • 175ml creme fraiche

  • 125g gruyère cheese Grated

  • 6 baby plum tomatoes Whole

  • 6 leeks

  • 1 medium red onion


  1. Preheat oven to 200C
  2. Slice all the veg into rings and roast in oven with a little olive oil until slightly softened
  3. Mix the crème fraîche and egg yolks
  4. Spread the pastry on a greased baking tray
  5. Sprinkle the grated cheese over and top with the veg
  6. Pour the cream mix over and season
  7. Cook for 15-20 mins or until the pastry is golden.
