  • 4oz butter

  • 1 tsp bicarbonate of soda

  • 200g sugar

  • 1 tbsp golden syrup

  • 140g flour

  • 80g desiccated coconut

  • 2 tbsp boiling water

  • 90g oats


  1. Rub the butter into the flour.
  2. Add sugar, oats and coconut
  3. Put the soda and syrup in a separate bowl/mug and pour over the boiling water mix until dissolved - allow to cool briefly before adding to dry ingredients
  4. Press firmly into a baking tin
  5. Bake at 160C-170C depending on your oven for 20 minutes
  6. Cut in tin while still warm

Handy Hint

I always mix the syrup, water and soda first so it has time to cool by the time I need it

(And even nicer smothered in dark or milk chocolate - think a super large hob nob)
