Crushed pineapple boiled fruit cake

  • 4oz self-raising flour

  • 1 tsp bicarbonate of soda

  • 2 eggs

  • 4oz pineapple drained and crushed

  • 1 tbsp lemon juice

  • 8oz granulated sugar

  • 1lb mixed dried fruit

  • 4oz plain flour

  • 1 tsp ground nutmeg

  • 4oz butter

  • 250ml water


  1. Put sugar, water, fruit, pineapple, nutmeg, bicarb and butter in pan and boil for 1 minute.
  2. Allow to cool then beat in the eggs and sifted flour. Mix thoroughly.
  3. Put in lined 8’’ tin and bake at 350/180 degrees. (Fan is 160), for 1-1/1/4 hours

Handy Hint

I wrap brown paper around outside of tin ‘cos it sometimes over cooks on outside.
