  • 1 tsp bicarbonate of soda

  • 1 tsp brown sugar

  • 1 tsp salt

  • 8oz wholemeal flour

  • 2oz wheatgerm

  • 4oz plain flour

  • 1 egg

  • 2oz bran

  • 1 tbsp lemon juice

  • 1 pint milk


  1. Mix all the dry ingredients
  2. Beat the egg with the lemon juice and make up to 1 pint with the milk
  3. Mix the wet and dry ingredients to make a fairly soft dough, adding more milk if needed.
  4. Split mix between 2 greased loaf tins and bake at 180C for about 50 mins

Handy Hint

Perfect bread for making with children as no kneading/proving is required, just mix and bake. The “spare” loaf can be frozen for future use. Delicious served warm with lots of butter and smoked salmon.
