Christmas pudding

  • 200g flour

  • 4 eggs or up to 6 if mixture is dry

  • 110g almonds optional

  • 50g candied peel

  • 1 tsp mixed spice

  • 1 tsp baking powder

  • 1 splash brandy or whiskey

  • 1 apple grated

  • 450g dried fruit

  • 230g butter

  • 230g breadcrumbs

  • 230g brown sugar

  • 1 lemon or orange


  1. Mix the dry ingredients.
  2. Grate the butter and add
  3. Add grated apple, lemon (or orange zest), whisked eggs, 1-2 glasses of brandy (or whiskey) and lemon (or orange) juice until the mixture is too wet to handle.
  4. Put into a pudding basin which has been lined with two layers of parchment/greaseproof paper and cover with a layer of foil or the lid of the pudding basin.
  5. Sit on an upturned plate or steamer insert in a pan (so it doesn't touch the bottom) and steam for 8 hours. Keep an eye on it so it doesn't run out of water.
  6. Store and add brandy or whiskey every couple of weeks.
  7. Reheat on Christmas day by steaming for about 2 1/2 hours.

Handy Hint

I've ticked nut free as you can leave out the almonds. I replace them with glace cherries.
