  • 1 onion chopped

  • 1 tsp salt

  • 2 tbsp vegetable oil

  • 1 tbsp ginger minced

  • 0.5 tsp hot chilli powder

  • 1 tsp cumin

  • 1 tbsp garlic minced

  • 1 tsp coriander

  • 2 lemon wedges For garnish

  • 500ml Natural Yogurt For the dip (you can use greek yogurt)

  • 25g parsley freshly chopped (you can swap this for coriander)

  • 1lb mince (chicken, lamb or beef)

  1. Put mince in bowl
  2. Add all the other ingredients.
  3. Mix well with hands
  4. Leave to marinade in the fridge for a few hours or better still, over night.
  5. Remove from fridge and form small balls, the size of brussel sprouts.
  6. Heat oil in frying pan and add the balls in single layers. Toss them around to get them caramelised. Don't worry if water is released from the onions and yogurt. This will add to the flavour as it caramelises. Cover briefly with lid or place in oven until ready to serve. You may need to do more than one batch.
  7. Serve with yogurt dip:
    (a) Add grated cucumber to yogurt with salt and pepper to taste.
    (b) Or for an easier dip add 1 tsp of mint sauce to yogurt and mix.

Serve on a platter with the dip in a bowl in the middle and cocktail sticks in the meatballs. Scatter with fresh parsley and lemon wedges.

Handy Hint

Can freeze the uncooked meatballs and then de-frost when required.
Make more than you think you will need as it goes quickly.
