Toasted granola (with no added sugar)

  • 5 tsp ground cinnamon

  • 90g porridge oats

  • 140g pumpkin seeds

  • 80g desiccated coconut

  • 120g dried cranberries

  • 230ml apple juice

  • 300g mixed whole nuts or chop them if you prefer

  • 360g rolled oats

  • 160g sultanas plus same amount of any or all of the following: raisins, sunflower seeds, pumpkin seeds, chopped soaked apricots


  1. Mix all the dry ingredients except the dried fruit in a big bowl, customise to to taste using whatever nuts & seeds you prefer.

  2. Mix in the apple juice, add a splash more if it looks very dry.

  3. Leave to stand for 30 mins or longer to let the juice soak in.

  4. Heat the oven to 180 degrees C or Gas mark 4

  5. Spread the mix over 2 large baking trays and cook for 15-20mins, give it a stir and another 10 mins or so until brown. I like mine really well done and toasty so basically cook to taste.

  6. Tip it back into your mixing bowl and stir through the dried fruit of your choice, as much or as little as you like. Store in an airtight container.

Handy Hint

Great with chopped fruit and yogurt for breakfast!

Leave out the cinnamon if you don't like it ;-)
