Tomato and cheese macaroni

  • 3 handfuls cheddar grated

  • 4 anchovies

  • 1 slice bread

  • 300g macaroni

  • 3 tomatoes chopped

  • 125ml double cream

  • 1 tbsp dried basil

  • 2 tbsp dried thyme


  1. In a food processor, whiz up the bread into crumbs. Then put in a bowl and mix in 1 handful of grated cheese and the thyme and set aside.
  2. Put water on to boil pasta.
  3. Whizz up tomatoes, basil, cream and anchovies.
  4. When pasta is cooked, mix together with the tomato cream and put into an ovenproof dish. Top with the breadcrumbs.
  5. Put in oven for 10-15 minutes at 200C, Gas Mark 6.

    You've only used one of your 3 handfuls of grated cheese... What about the other two?

    Looks great but not vegetarian with anchovies as an ingredient.
