Thai green pork curry

  • 1 pinch salt

  • 1 tbsp sugar

  • 1 tbsp vegetable oil

  • 400ml vegetable stock

  • 1 lime quartered

  • 400ml coconut milk

  • 1 tbsp lime juice

  • 400g pork fillet finely sliced

  • 500g aubergine

  • 1 tbsp fish sauce

  • 2 tbsp coriander leaves

  • 2 shallots sliced

  • 2 tbsp green curry paste

  • 2 lemongrass stalks

  • 100g tinned bamboo shoots sliced


  1. Heat the oil and fry the curry paste over a gentle heat for a few mins, stirring constantly
  2. Add coconut milk, veg stock, salt, sugar, shallots and lemongrass and simmer for five minutes
  3. Thickly slice the aubergine and cut each slice into quarters
  4. Add to the curry with the bamboo shoots and simmer for 20 min
  5. Add the pork and simmer for 5 min until cooked
  6. Add fish sauce and lime juice.Stir in coriander

Handy Hint

Serve with steamed rice and lime wedges.
