  • 1 onion chopped

  • 400ml coconut milk

  • 1 chicken leg seasoned

  • 1 chicken stock cube dissolved

  • 2 handfuls long grain rice

  • 1 handful peas

  • 1 carrot chopped

  • 1 sweet pepper chopped

  • 1 tsp browning or brown sugar


  1. Heat oil in non stick pot and add sugar until caramelised (or add browning).
  2. Stir in the chicken pieces and toss until coated and leave for about 3 minutes.
  3. Add amount of rice required and stir, then add stock and coconut milk to just about cover rice and chicken.
  4. Bring to a boil and then simmer. At this point add the vegetables and leave for about 30 minutes or until water has evaporated and the pelau is nice and moist and meat peels off nicely from the bone. Serve immediately with a salad
