  • 1 tbsp olive oil

  • 1 tsp capers

  • 1-2 handfuls cherry tomatoes halved

  • 1 vinegar or lemon juice

  • 1 handful broad beans

  • 1 handful cornichons or gherkins, chopped

  • 1 parsley/chives/spring onions (optional)

  • 1 tbsp vinegar or lemon juice


  1. Shell the beans or open the packet from the freezer and boil for a couple of minutes.
  2. Pop them out of their skins and put in a bowl with halved tomatoes.
  3. Mix chopped cornichons, capers, herbs and/or spring onions with olive oil and vinegar or lemon juice to make a vinaigrette
  4. Mix together.
