  • 175g flour

  • 1 tin chopped tomato puréed, or use passata

  • 1 handful cheese any hard variety, grated

  • 350g pasta or spaghetti

  • 100g butter

  • 1 tbsp creme fraiche or cream

  • 1 tbsp garlic butter

  • 1 handful mushrooms or ham or tuna, or anything else your toddler likes

  1. Melt the butter in the pan, stir in the flour until it is a thick paste and then add the tomatoes a bit at a time stirring consistently until it is a good consistency ie: thick but will drop off the spoon easily.
  2. Then, add a bit of milk and crème fraiche or cream to it until it is light red in colour and has a creamier taste to it. Add a couple of handfuls of grated cheese. The kids can be grating the cheese when you are doing the sauce.
  3. According to the child's taste that week, add vegetables, mushrooms, tuna, ham and a knob of garlic butter.

Handy Hint

The basic idea is that you cook a white sauce but substitute puréed tomatoes with a little crème fraiche or cream for the milk.
