Easy meatballs and pasta sauce

  • 1 medium onion

  • 1 tsp olive oil

  • 1 sweet potato (optional)

  • 1 pinch freshly ground black pepper

  • 1 tin chopped tomato

  • 6 sausage good quality

  • 1 pepper (optional)

  • 1 courgette (optional)

  • 1 stick celery (optional)

  • 4 cloves garlic finely chopped

  • 1 carrot (optional)

  • 4 handfuls pasta or spaghetti

  • 1 pinch oregano and/or basil

  • 1 handful mushrooms (optional)


  1. Put a little olive oil into the bottom of a large saucepan. Add the black pepper, garlic and herbs and leave while you prepare the rest.
  2. Chop the veg into small (about 1cm) pieces.
  3. Untwist and separate sausages with scissors.
  4. Take one sausage at a time and twist a meatball-sized portion at the end (like you would twist a balloon to make balloon animals), then pinch with your fingers and slide this section of the sausage meat out of the skin to form a meatball.
  5. Do this with all of the sausages (you should be able to make 3-4 out of each depending on size) and place on a plate or chopping board (or directly into the hot oil if you are making a smaller quantity).
  6. Heat the oil until hot. Add any hard veg (carrot, sweet potato) and the meatballs. Cook for 2-3 minutes until the meatballs are sealed and add the onions.
