  • 1 onion chopped

  • 1 pinch chilli optional

  • 1 splash soy sauce

  • 2 eggs beaten

  • 4 cloves garlic chopped

  • 1 handful fresh coriander

  • 3 spring onions chopped

  • 1 bag vegetables suitable for stirfrying

  • 600g fresh noodles or dry noodles, but they will need to be immersed in hot water and drained before frying

  • 250g seafood


  1. Fry the garlic, add the onions in and fry until golden brown.
  2. Fry the mixed vegetables and add salt, pepper and chilli if you like it spicy for about 5 minutes.
  3. Add the noodles and some black soya sauce and chilli and fry for about 10 minutes, constantly tossing it.
  4. Add the sea food and stir in the beaten eggs and cook for about 10 minutes. Serve with some coriander and chopped spring onions.
