  • 2 tbsp double cream

  • 1 handful cheddar grated

  • 1 tomato peeled and chopped

  • 2 chicken breast cut into strips

  • 1-2 shallots finely chopped

  • 1 tbsp butter

  • 1 handful flat-leaf parsley chopped


  1. Melt some butter in a small pan and fry the shallots until soft.
  2. Add the chicken and fry for a few minutes.
  3. Add the tomato and cook for a couple of minutes.
  4. Add the cream, the cheese and parsley.
  5. You can give the strips of chicken as finger food dipped in the cream, or blend.
