  • 1 onion

  • 1 stock cube

  • 3 handfuls rice

  • 1 clove garlic

  • 2 handfuls prawns

  • 0.5 cucumber or courgette

  • 1 handful mushrooms (optional)


  1. Brown half an onion in a frying pan. While it is cooking make up a pint of chicken stock (I use homemade stock).
  2. Peel and slice half a cucumber or zucchini and chop up some garlic.
  3. Add them to the onion and fry them for 2 minutes.
  4. Add rice and fry for another 2 minutes.
  5. Pour half the stock on and cook the rice. Continue to add stock or water as necessary.
  6. Add prawns and chopped up mushrooms. Cook for another 5-10 minutes.
