  • 1 onion peeled and chopped

  • 1 tbsp turmeric

  • 2 tsp mustard seeds

  • 2 tsp cumin seeds

  • 250g red lentils

  • 2 cloves garlic peeled and chopped

  • 1 thumb-sized piece of ginger peeled and chopped

  • 2 tsp fennel seeds

  • 2 tsp fenugreek

  • 2 tsp black onion seeds


  1. Fry the onions, garlic and ginger in a sunflower oil until translucent.
  2. Add the seeds and fry until they become fragrant.
  3. Add a little water and the turmeric and fry for another 5 minutes.
  4. Add two pints of water (plus salt to taste) and bring to the boil at which point add the lentils.
  5. Simmer until lentils are soft and squishy.
  6. Add the remaining ingredients and simmer for another 10 minutes and serve with rice.
