  • 125g butter

  • 90g caster sugar

  • 2-3 drops vanilla essence

  • 1 pinch salt

  • 5ml ground mixed spice

  • 250g plain flour

  • 1 tsp baking powder

  • 1 tsp bicarbonate of soda

  • 60g walnuts finely chopped

  • 1 egg


  1. Stir together flour, baking powder, salt, bicarb and mixed spice.
  2. Cream butter and slowly add brown and white sugar, beating well.
  3. Beat egg with vanilla and add to butter mixture, then mix in the flour mixture - an electric beater is perfect for the job. Lastly, add the walnuts.
  4. Form into 2 long sausages, wrap in greaseproof paper and chill until firm enough to slice.
  5. Cut into thin rounds and bake on an un-greased baking sheet at 180C/350F/Gas Mark 4, for about 15 minutes.
  6. Cool on a cake rack. Makes about 54.
