  • 225g self-raising flour

  • 125ml milk

  • 1 pinch salt

  • 25g sugar

  • 40g butter or margarine


  1. Sieve flour and salt together.
  2. Rub in the butter or marg.
  3. Mix in the sugar.
  4. Make a well in the mixture, add the milk all at once and mix with a round-ended knife until a dough is formed.
  5. Turn out onto floured board and knead lightly until smooth.
  6. Roll out into a rough circle 0.75 inch thick.
  7. Use cutters to cut to desired size.
  8. Put scones into oven preheated to 220C/200C fan.
  9. Bake for approximately 10 minutes, until the scones risen.

Handy Hint

  1. You can use plain flour with 1/2 tsp of baking powder.
  2. Add 1oz of dried fruit, like sultanas or cherries, when you add the sugar.
  3. Serve hot with butter for very quick treat, or cold with whipped cream and jam for afternoon tea.
