Yoghurt birthday cake with chocolate icing

  • 160g caster sugar

  • 250ml oil

  • 3 tsp baking powder

  • 200ml double cream

  • 2 tsp vanilla essence

  • 100g milk chocolate

  • 225g plain yoghurt

  • 2 eggs

  • 100g plain chocolate

  • 225g plain flour

  • 1 bag chocolate buttons (to decorate)


  1. Preheat oven to 160C. Grease two sandwich tins.
  2. Blend the oil and sugar, then mix in the yoghurt.
  3. Then mix in eggs, flour, baking powder and vanilla.
  4. Pour into the prepared tins and bake for about 30 mins until a skewer comes out clean. Remove from tins and cool on a rack.
  5. To prepare icing break the milk choc into pieces and put in a bowl with half the cream.
  6. Melt in microwave (about a minute but keep checking). Stir.
  7. Sandwich together the cakes.
  8. Then do the same with the plain choc and remaining cream and use the melted mix to cover the top and sides of the cake.
  9. Decorate the cake with chocolate buttons (or any other decorations) and leave in the fridge to set.
