  • 1/2 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1 pinch salt

  • 150g dark chocolate in smallish chunks or choc chips

  • 175g demerara sugar

  • 2 medium eggs beaten

  • 175g plain flour

  • 175g butter in pieces

  • 75g macadamia nuts chopped

  • 100g jumbo oats

  • 2 pieces stem ginger chopped

  • 2 banana


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Peel and roughly slice bananas and put in a food processor with the butter, eggs, vanilla extract and sugar. Process until smooth, add the flour, baking powder, pinch of salt, baking powder and oats, and process again until well mixed. Stir in the chocolate, macadamias and stem ginger.
  3. Drop teaspoonsfuls of the mixture onto greased baking sheets, leaving room between them as they will spread. Bake for 15-20 minutes until lightly browned, but still slightly soft. Cool on a wire rack.

Use ripe bananas.
