Chicken rice casserole

  • 2 tbsp olive oil or butter

  • 1 whole chicken

  • 1 onion or shallot chopped

  • 2 chicken stock cube

  • 75g rice

  • 2 carrot chopped

  • 1-2 roasted peppers chopped


  1. Fry the onion or shallot in half the oil or butter until soft, remove.
  2. Brown the chicken in the remaining oil or butter.
  3. Place the chicken in a baking dish, then scatter over chopped vegetables.
  4. Pour the rice around the chicken.
  5. Mix the stock cubes in enough boiling water to cover the rice, pour over the casserole.
  6. Cover (foil is fine) and bake at 200C until the chicken and rice are thoroughly cooked.
  7. You may wish to take the cover off towards the end of cooking time if you like a brown top.

Handy Hint

Cooking will depend on the amount and cuts of chicken - mine took around an hour and a half when I cooked a whole chicken.

    Gluten free, low fat and budget, depending on type of stock and chicken cuts used. This makes a really delicious, tender chicken dish surrounded in tasty, risotto-type rice.
