Beany sausage casserole

  • 1 tbsp olive oil

  • 1 stock cube

  • 1 large onion

  • 1 tin chopped tomato

  • 1/4 pints water

  • 1 clove garlic

  • 150g potatoes chopped into small cubes

  • 1 tsp mixed herbs

  • 1 tin baked beans

  • 1 tin stewing steak

  • 8 thick sausages


  1. Pre-heat the oven to 200C, and finely chop the onion. Cut each sausages into four small pieces.
  2. Warm the olive oil in a large oven dish, then add the onion and sausages, and cook for approximately 15 minutes, until they're beginning to brown.
  3. While they are cooking, par-boil the potatoes (until only 'just' cooked).
  4. Remove the sausages and onions from the oven, and reduce the oven temperature to 180C.
  5. Now, add the potatoes, tomatoes, baked beans and stewing steak to the sausages and onions, (at this point it looks like something the cat brought up - but trust me, it improves with cooking!).
  6. Mix the ingredients together, then sprinkle the mixed herbs and stock cube over the top and add the garlic, crushed.
  7. Finally, pour in the water, stir again, and cover with foil. Cook in the centre of the oven for approximately 30 minutes, until piping hot throughout and with a thick consistency.
  8. Serve in casserole dishes with freshly baked bread…and enjoy!
