Berry easy blueberry muffins

  • 300g self-raising flour

  • 100g butter

  • 1 tsp vanilla extract

  • 100g caster sugar

  • 140ml milk

  • 2 eggs large

  • 150 gs blueberries

  • 1 tsp baking powder heaped


  1. Cream together the butter and sugar then add the eggs one at a time.
  2. Add the milk and vanilla then fold in the flour and baking powder.
  3. Add the blueberries, stir, then put the mix into muffin cases. Bake for 20-30 minutes at about 160C/140C fan.
  4. Leave the muffins to cool in the tray for 10 minutes before turning out.

Handy Hint

For the best muffins, don't over-mix the ingredients as it should be a lumpy batter. Perfect for making with the DC!

    Super easy to make & as it's best for the batter to be lumpy a perfect recipe to let the DC lose with!
