Cauliflower, bacon and cheese bake

  • 1 tbsp oil

  • 150g cheese mature

  • 1/2 tsp paprika

  • 1 cauliflower or mix of broccoli and cauliflower

  • 2 tbsp plain flour

  • 1 bunch spring onions chopped

  • 25g butter

  • 1 handful Parmesan grated

  • 250g lardons chopped

  • 425ml milk warm

  • 50g baby spinach


  1. To make the cheese sauce, melt the butter on the hob then add the flour and mix until smooth. Cook on a low heat for a minute.
  2. Start to gradually add warm milk, constantly mixing until all milk is combined.
  3. Add the grated cheese and taste to see if it is cheesy enough.
  4. Break cauliflower into florets and steam for 5-7 minutes until tender
  5. In a frying pan, add the oil and heat, then add the bacon bits or lardons, cook for 2-3 mins before adding spring onions.
  6. Cook for 1 minute then add the spinach and cook until wilted.
  7. In a flattish baking dish, spread out the cauliflower. Add the bacon, onion and spinach mix over the top and season with black pepper, then pour over the cheese sauce.
  8. Sprinkle with Parmesan and paprika.
  9. Put under medium grill for 10-15 minutes until golden and bubbling.

Handy Hint

If cheese sauce goes lumpy, don't panic, keep stirring with wooden spoon or spatula, pressing lumps against the side of the pan.
