Crispy chickpeas

  • 1 handful flour (or cornmeal)

  • 1 pinch seasoning

  • 1 clove garlic

  • 1 tin chickpeas drained and rinsed

  • 1 pinch spices

  • 1 packet of pitta breads or tortillas

  • 1 pinch parsley or coriander (optional)


  1. Mix your crushed garlic with a handful of flour, add seasoning and spices.
    2, Dredge your chickpeas in the flour or cornmeal.
  2. Fry in around 1cm of hot oil until brown and crispy.
  3. Stir in chopped herbs if using. Stuff into pittas or tortillas. Serve with salad

Handy Hint

I like this best with smoked paprika or nigella seeds. It's particularly good with granary flour because you get more crunchy bits although cornmeal gives you the crispiest 'batter' .
