Broccoli and stilton soup

  • 1 vegetable stock cube

  • 1 onion

  • 1 potato peeled and diced

  • 1 clove garlic chopped

  • 1 block stilton small

  • 2 tbsp cream optional

  • 1 broccoli the very tough part of the stalk removed and cut into florets


  1. Put a glug of oil into large saucepan and heat.
  2. Add onion and garlic and fry for a couple of minutes until turning translucent.
  3. Add potato and stir to coat with oil. Add broccoli.
  4. Make stock up with boiling water, making enough to cover the veg in the pan.
  5. Bring back up to boil, then turn heat down and simmer for about 15 minutes, or until potato cooked.
  6. Take off heat and purée with hand held blender.
  7. Return to low heat, stir through cream if using and crumbled Stilton, and heat gently until melted.

Handy Hint

Serve with croutons and/or crusty bread.
