  • 1 tbsp butter

  • 4 tbsp milk

  • 3 tsp baking powder

  • 1/2 tsp salt

  • 2 tbsp vegetable oil

  • 2 eggs beaten

  • 4 small bananas mashed

  • 70g icing sugar


  1. In a mixing bowl, combine the milk and bananas and then sift in the salt and baking powder.
  2. Thoroughly mix in the eggs and butter.
  3. Heat the vegetable oil in a large skillet.
  4. Carefully place spoonfuls of the mixture into the hot oil and fry until brown.
  5. Flip the fritter and continue to brown.
  6. Remove fritters from the oil and drain on paper towels. Dust the fritters with icing sugar and serve while warm.

    Easy to do - needs to be served with ice cream (maybe that's just me!!)I found they need to be very small to make turning them easier

    Had a few bananas left over and knew I had spotted this recipe a while the other day! Very easy peasy and tastes great. Thumbs up all round (nice with vanilla ice cream ;) )
