  • 50g spring onion diced

  • 1 sausage pre-cooked, chopped

  • 450g cheese grated

  • 1 tbsp salsa to taste

  • 2 eggs scrambled

  • 1 tbsp sour cream to taste

  • 50g tomatoes diced

  • 2 flour tortillas

  • 1 tbsp guacamole to taste


  1. Place one flour tortilla in a heated 12-inch pan.
  2. Evenly sprinkle cheese over the top of the tortilla. Place the scrambled eggs on top of the cheese and evenly distribute the cooked sausage over the eggs. Allow the cheese to melt.
  3. Top with the diced tomatoes and green onions. Place the second flour tortilla on top and gently flip to brown the other side slightly.
  4. Remove from the skillet. Cut into six equal wedges. Serve with guacamole, sour cream and salsa.
