Gluten free, high fibre and low carb coconut bread

  • 1 tsp baking powder gluten-free

  • 1/2 tsp salt

  • 2 tbsp honey

  • 6 eggs

  • 90g coconut flour sifted

  • 2 tbsp virgin coconut oil or butter


  1. Blend together the eggs, butter, honey and salt.
  2. Combine the coconut flour with baking powder and whisk thoroughly into a batter until there are no lumps.
  3. Pour into a greased loaf pan and bake at 175C for 40 minutes.
  4. Remove from the pan and cool on a rack.

Handy Hint

It is gluten free, high fibre and low carb. When using gluten free flour, it will increase the number of eggs in a normal recipe.
