  • 1 sugar (to taste)

  • 1 tbsp sugar (to taste)

  • 1 splash vodka

  • 1 grapefruit (per person, pink if possible)

  • 1 tbsp mint (per person)

  1. Squeeze/pulp the grapefruits to give a mixture of juice and pulp without pith or pips.
  2. Sweeten to taste, and add a good tablespoon of fresh chopped mint per person.
  3. Pour into a freezer container. Freeze for approx 6-8 hours, giving it an occasional stir with a fork when you remember.
  4. To serve, scoop into martini glasses and drizzle with vodka to taste.

Handy Hint

Leftovers make a great base for grapefruit and mint cocktails - add vodka and top up with soda.

I've chosen the starter section, but it makes a great end to a meal
