Chicken and avocado stroganoff

  • 1 tbsp olive oil

  • 1 pinch salt and freshly ground black pepper

  • 175ml pesto

  • 6 skinless chicken breasts

  • 1 handful basil

  • 600g tagliatelle

  • 5 spring onions

  • 150ml creme fraiche

  • 2 avocado


  1. Cook the pasta according to packet instructions
  2. Heat the oil in a frying pan; add the spring onions and fry until softened, but not coloured.
  3. Cut the chicken into strips and add to the pan. Fry, turning as necessary until cooked through.
  4. Meanwhile, halve, stone and peel avocados and cut into thin strips.
  5. Stir the creme fraiche and pesto into the chicken and then add the avocado and seasonings and heat through.
