Deliciously dark flapjacks

  • 150g butter (or margarine to make dairy free)

  • 30ml golden syrup

  • 5ml ground ginger

  • 30ml treacle or molasses

  • 100g dark brown sugar (light will work ok)

  • 350 gs rolled oats

  • 2 handfuls apricots

  • 2 handfuls sunflower seeds

  • 1 handful raisins


  1. Grease a shallow baking tray (approx 30cm x 15cm).
  2. Preheat the oven to 180C/Gas Mark 4.
  3. Melt the butter (or margarine), sugar, treacle and syrup in a pan on a low heat until the butter and sugar are melted and dissolved.
  4. Into a mixing bowl add the dry ingredients - adding whichever extras you feel like today. Pour in the sugar mix and stir well.
  5. Press the mixture into the baking tin.
  6. Cook in the oven for about 20 minutes.
  7. Allow to cool then cut into chunks (although it often breaks into rough lumps but this is part of its charm).
  8. Try and keep people from sneaking bits until they are ready to serve.

    Yum - these went down very nicely with everyone, not too sweet (even with chopped apricots), and lovely subtle gingery-ness. I only did half quantities as I didn't have enough oats in the cupboard, but next time it'll be full steam ahead.

    Everyone I've made this for loves it and they usually ask for the recipe afterwards. It's great because you can add what you feel like or have in to make it slightly different each time.
