  • 460ml milk

  • 1 handful cheese grated

  • 4 eggs

  • 70g plain flour

  • 1 tbsp softened butter or margarine

  • 2 handfuls fillings of your choice (eg ham, tomato, salmon, onion)

  • 1 tbsp butter softened (or margarine)


  1. Mix all the ingredients except the cheese and fillings.
  2. Pour the mixture into a buttered oven proof dish.
  3. Mix in the fillings of your choice and top with grated cheese.
  4. Bake at 180°C/gas mark 5 for 35-40 minutes until set.

Handy Hint

This quiche is super easy and forms its own crust as it bakes - always popular in our house and great for using up leftovers.

    I make this with a large head of broccoli (precooked and broken up into florets) and about 400g fresh salmon (not precooked) - much more than 2 handfuls! And I add the handful of cheese to the mixture and not on top. The first time I made it was in a deep pyrex and it wasn't very good (didn't set very well). Second time was in a larger roasting pan (about 6x10") and it came out much better, I think a thinner layer and a metal container (to conduct the heat) worked much better than the pyrex. Will def make again with salmon/cubed ham/chicken/blue cheese & broccoli or maybe a spinach and feta quick quiche/spanakopita cross over.
