Creamy oven-baked chicken with garlic potatoes

  • 4 medium baking potatoes thinly sliced

  • 1 handful frozen peas

  • 600ml white sauce

  • 2 tbsp garlic butter

  • 3 cooked chicken breasts shredded, or leftovers of a roast chicken


  1. Layer half the potato slices over the bottom of a shallow oven-proof dish and season with salt and pepper.
  2. Pour the white sauce over the chicken then scatter over some frozen peas. Arrange shredded chicken on top then add some more peas.
  3. Add remaining potatoes in even layer, and dot surface with garlic butter. Season.
  4. Cover tightly with lightly buttered foil and oven cook at 200C/180C fan/Gas Mark 6 for 1 hour. Remove foil and continue to cook for 20-30 min until the potatoes are golden and tender. Serve with a green vegetables such as green beans or mangetout.

Handy Hint

If you make a meal with cooked chicken breasts, put an extra 2 or 3 on the baking tray and then keep in fridge overnight to use for this recipe the next day.
Use margarine instead of butter to make healthier, and omit the garlic if children don't like the taste.

    This was lovely,although I was glad I had added extra garlic in with the chicken to give the dish more of a flavour. In future i would cook the potatoes before putting them in the oven so that it would be quicker to cook.

    Kids loved it (1, 4 and 5yrs) and eldest 2 had seconds. DH had thirds (!! - bloody beast!) and I also thoroughly enjoyed it. Will deffo be doing again.
