  • 1 onion peeled and chopped

  • 1 celery stick chopped

  • 1 leeks chopped

  • 130g carrot peeled and chopped

  • 1 tbsp butter

  • 170g root vegetables peeled and chopped (eg swede, parsnip, sweet potato, turnip)


  1. Melt the butter in a pan and slightly fry the onion for 5 mins. Add all the other ingredients and cover with water. Bring to boil and simmer for 1 hour.
  2. Strain the stock and squeeze remaining juices through a sieve. A real base stock for loads of dinners.

Handy Hint

Can add and meats to this stock to make great dinners
