Pasta asparagus

  • 2 tbsp olive oil

  • 4 large tomatoes

  • 2-4 cloves garlic

  • 125g mozzarella

  • 1 bunch asparagus

  • 1 handful grated Parmesan (if you're a vegetarian subsitute this for another cheese)

  • 4 handfuls pasta cooked

  • 1 handful parmesan grated


  1. Cut a small X in the end of the tomatoes and submerge them in boiling water for 1 minute, take them out and peel the skins off. Roughly chop them.
  2. Heat the olive oil and add lots of chopped garlic. After a few minutes add the chopped tomatoes.
  3. Steam the chopped asparagus in the microwave and add to the tomato mixture.
  4. Allow to cook together for 5-10 minutes.
  5. Stir in to the cooked pasta.
  6. Serve with mozzarella and parmesan sprinkled on top.

    We eat this loads during asparagus season. Very quick and easy
