'Frog' soup

  • 1 tbsp olive oil

  • 1 medium leek

  • 225g potato diced

  • 1l vegetable stock

  • 1 handful cheese grated, to sprinkle on top

  • 1 medium stick of celery

  • 280g frozen petits pois


  1. Heat the oil in a large saucepan. Add the leek and fry over a medium heat for 5 minutes until softened. Add the celery and potato and cook for a further 5 minutes.
  2. Pour the stock over the vegetables and bring to the boil. Cover, reduce heat and simmer for 15 minutes. Add petits pois and simmer further 5 minutes until the potato is tender.
  3. Using a hand blender or food processor, blend the soup until smooth. Reheat if necessary before serving and top with grated cheese.

    Delicious!!! Loved by mum, dad and three kids, 8, 9 & 11. Will definitely make again. I added a couple of tsps of mint sauce for a summery taste.

    My 2 DS's love this soup and ask for it on a regular basis. I serve it with bread or toast and its a really quick, easy dinner.

    this was really easy and very tasty. I added garlic but then, i always do! Our 7 month old enjoyed it lots.

    Named Frog Soup by my daughter as it is green. It is her favourite and is a great way of getting them to eat some veg. My children dip toast soldiers in their soup.
