Chickpea and spinach surprise

  • 1 tsp olive oil

  • 1 large sweet potato peeled and diced

  • 1 clove garlic finely chopped

  • 1 tin chickpeas

  • 2 medium onions finely diced

  • 2 medium leeks finely diced


  1. Steam the sweet potato until tender, this takes about 10 minutes.
  2. Place the leeks and onions in a frying pan with oil and sauté gently for 6 minutes.
  3. Add the spinach and garlic to the frying pan, stir all the ingredients and continue to sautee for a further 4 minutes.
  4. Wash the chick peas thoroughly and place in a bowl, along with the sweet potato and all the contents from the frying pan. Blend or mash until a consistency is reached suitable for the age of your baby.
  5. Place into individual bowls, label and can be placed into the freezer. Reheat in microwave when required once defrosted for 25-30 seconds.

Handy Hint

This is great used cold in place of butter on bread, served with tomato soup or as an accompaniment to a main meal instead of traditional mashed potato.

    I made this last night, quick and easy and tasty. I added mascarpone as well to get some dairy in.

    Easy, nutritous, unusual but easily obtained ingredients all year round, a great combination, once tried it is pretty much guaranteed this will be a regular dish in the household, for all age ranges.
