  • 3 onion large

  • 3 tbsp olive oil

  • 1 bag pine nuts

  • 3 naan or pitta breads

  • 3 tsp sumak or red thyme

  • 3 chicken thigh or other chicken pieces


  1. Coat the chicken in olive oil and sumak, then place in a roasting dish and cook at 200C/Gas Mark 6 for about 30 minutes, depending on size and amount of chicken.
  2. Fry the onions and pine nuts in about 2 tbsp olive oil. Add another 2 tbsp sumak. Cover and leave to cook for 5 minutes on low heat.
  3. When the chicken is cooked, lift it out of the roasting dish and put the naan or pitta on the roasting tray, put the chicken top then add the onions and pine nuts.
  4. Put back in the oven for 10 minutes, and serve with a couscous salad.

Handy Hint

Nann bread works better than pitta as it takes up the oil better.

    We get our sumak from Jordan when the MIL goes, but you should be able to get it in Tescos under the name red thyme (it's also delicious on boiled eggs!)
