200g self-raising flour
1 medium egg
225g dark brown sugar
175g dried mixed fruit soaked in 0.5 pints milk overnight
2 Weetabix crushed
- Put all the ingredients (the fruit AND the milk it's been soaking in) into a mixing bowl and mix well with a wooden spoon.
- Put into a well greased 2lb loaf tin.
- Bake for 1-1.5 hours in a preheated oven at 140C/Gas Mark 3.
Serve sliced spread with butter.
