  • 200g self-raising flour

  • 1 medium egg

  • 225g dark brown sugar

  • 175g dried mixed fruit soaked in 0.5 pints milk overnight

  • 2 Weetabix crushed


  1. Put all the ingredients (the fruit AND the milk it's been soaking in) into a mixing bowl and mix well with a wooden spoon.
  2. Put into a well greased 2lb loaf tin.
  3. Bake for 1-1.5 hours in a preheated oven at 140C/Gas Mark 3.

Handy Hint

Serve sliced spread with butter.

    I make this every week for the coffee morning at the school I work at. It's a deliciously light fruit loaf. However, I do recommend trying it with golden caster sugar instead of the dark brown sugar as it's so much lighter. The recipe I have is: 3 weetabix 175g dried fruit (I do half dried fruit and half glace cherries) 150g Demerara or golden caster sugar 300ml milk 1 egg 250g self raising flour. I soak the weetabix and fruit in the milk as long as I possibly can to prevent the cake being stodgy and I advise cooking it for approx 1.5-2 hours on a low heat otherwise it goes stodgy inside and burnt on outside x
